Breakfast Recipe.....

Here is another great recipe that uses up a lot of eggs!!
I like it because you can adjust the amount of eggs up put in it also.
Farmer's Casserole
6c. tater tots
1c. grated yellow cheese (colby, chedder, etc.)
1c. diced fully cooked ham
4-12 beaten eggs
1 1/2c. milk
Grease a 13x9 baking dish. Arrange tater tots in bottom of dish. Sprinkle with ham and cheese.
In mixing bowl beat together eggs and milk. Pour over potato mixture.
Bake at 350 for 40-45 min. If you added more eggs it may take more time.
The other nice thing about this recipe is it freezes nicely!
Just assemble and put into freezer un-cooked.
I made about 14 of these the other day because we had so many eggs!
Everyone one really enjoys this one. :)
I think I'm going to get one out of the freezer for this morning!
