A Garden Tour.....

Recently we have been spending a lot time in the garden since the weather has gotten nice!

we planted tomatoes, peas, spinach, all kinds of peppers, squash and two kinds of beans. with more to come! I think planting okra is next.

Here are some pictures I took of the garden so far.......

These are our black berry plants.

We just put them in not to long ago, so I don't think we will get much fruit off them this year.

We are in the process of putting down gravel walkways, the black landscaping fabric is all we have done in some places. My brother and Dad have done a great job so far!

We like the gravel walkways best because it keep the weeds down and you can walk out there barefoot! We have terrible grass burs so the gravel helps t keep them down as well.

We also have planted in the herbs garden: spearmint, lemon balm, bee balm, bay laurel, a rose that makes rose hips, several other kinds of mints, lavender, comfrey and parsley.

I'm hoping to get some more herbs soon!

This is a wonderful herb to grow!

It gets really big and is easy to grow.
And it makes pretty purple flowers too!

They are getting quite old , so soon we are hoping to get some new.



I really like working in the garden!

It is so refreshing to be outside listening to the birds, marveling over the lady bugs that took up residency on the pea plants, and just being surrounded by what the Lord created!

A Surprise Visitor!!!

Last Sunday we were very surprised to see

this big guy wondering around our house!

He is the sweetest donkey!

We think someone trained him to be goats because once we put them in the same pen together he started herding them around!!

He didn't bite at them, he just tried to bring them one by one up to the shed!

It was a very funny sight!

Mom christened him "Eddie". :)
Isn't he sweet?

He likes to watch me milk the goats in the morning and he even greets me when I come outside!

Alright, its true, I really like him! I'm secretly hoping that no one comes to claim him. :)

This isn't the first time a donkey has shown up at our house, but that one was mean and belonged to the people down the road.

Actually we have had several big animals show up here.

Once 2 horses and a pony came up, then at another time 3 peacocks came for a visit!

They were very pretty, but extremely noisy!!!

We have asked around to see who he belongs to but no one seems to know.

I think he was just dropped of here since he has been with us six days already.

Anyway, that's the newest excitement at our house!

Farm Tour!

I just realized that I haven't shared any farm pictures with you all yet!

We have 11 goats. Four of which we are milking twice a day.
This year we had 4 kids born (one died).

We also have a large flock of chickens.

They are getting quite old so soon we hope to order some chicks.

Sorry I don't have any pictures of them right now, but I'll post some soon!

4 of our 5 ducks. They are really funny, they love to follow the dog around!
Some of them are sitting on eggs right now so I hope we will have ducklings soon.

We have a garden also! This year we expanded it and added a sitting place, herb garden ( this is my favorite! I'm always looking for new herbs to plant!)

and also some fig trees, blueberry plants and a flower bed.

I'll share pictures of our garden project soon!

An Abundance Of Eggs

Our chickens have been quite busy lately, so we have been blessed by an overflow of eggs!

I thought I'd share our favorite recipe for eggs.....

Simple Quiche

(pronounced keysh)

1 1/2c. of cooked meat chopped

(we have used bacon, sausage, ground meat or we have even done meatless)

2c. shredded cheese

(I use Colby jack)

8 eggs beaten

2c. milk

4TBS grated Parmesan cheese

1 1/2c. of a green vegetable chopped

sometimes I'll put in broccoli, asparagus or spinach

2 pie crust

(we buy or pie crust already made to save on time, but any pastry pie crust will work)

In a large bowl beat together eggs an milk. Add cheese and parm cheese. Mix well.

Chop up the vegetable and the meat. Stir into egg mixture.

Pour into pie crust.

Bake @350 for 35min or until knife inserted comes out clean.

Let rest for 10min before eating.

Enjoy!!!

This recipe will make 2 quiches.

We eat this for dinner, lunch or breakfast.

I make up a bunch at time and freeze them.

To defrost just reheat in 350 oven until center is warm.
